Food & Beverage department
The primary function of the food and beverage department is to
provide food and drink to a hotel’s guests. A large hotel might
have a coffee shop, a restaurant, a poolside snack bar, room
service, banquet halls, it might also have a lounge, a nightclub,
and a lobby bar. On a busy day (or night), these places may be
booked at the same time.
(A) Food production ( Kitchens )
Kitchens are responsible for preparing and producing food to both the guests of the hotel and the staff.
Activities of Food Production ( Kitchens ) :
- Communicating daily with Chef for job assignments.
- Producing food products for conference dining and special events, including hors, soups, entrees, and desserts.
- Producing nightly specials for the Conference Dining rotations.
- Having the abilities to produce food for any number of people.
- Maintaining high level of sanitation and safety in the kitchen area.
- Maintaining fabricated food items for storage.
- Maintaining positive relations with buffet attendants, servers, and dish washers.
B) Food and Beverage service
This department is responsible for serving food and beverages to
the hotel guests in a friendly, courteous and professional manner
according to the high standards of quality.
Activities of Food and Beverage service:
Serving food and beverage to guests in their rooms. The order is placed by the guest on telephone, and is recorded on a Kitchen Order Ticket. The room service waiter, who has been assigned that order, sets the tray according to the food or beverage ordered, picks up and delivers the order when it is ready.
- Preparing and serving food & beverage to customers and guests at the restaurant. In large hotel, restaurants may be specializing in certain types of food for example; there are seafood restaurants, vegetarian restaurants, or local food restaurants ……etc.
- Serving meals and beverage to guests at the Buffet, sometimes guests serve themselves from various dishes displayed on a table or sideboard.
- Serving food & beverage to customers and guests at Banquet halls on some occasions such as wedding or birthday (may be inside the hotel or outside the hotel).
- Serving hot meals, made-to- order sandwiches, and coffee to customers and guests at the Coffee shops.
- Serving food & beverage to guests at the conference room.
- Lounge staff may deal with lounge service as a specific duty.
